This Tzatziki is a delicious sauce for grilled meats, a dip for fresh veggies and even a salad dressing. When choosing which yogurt to use, please be sure to only purchase a brand that is made with organic, grass-fed, full-fat dairy. Low/non-fat dairy is often times loaded with sugar and other unnecessary ingredients to make up for the lack of fat. I recommend an extra large batch to keep in the fridge for a few days- it’s a great afternoon snack with some sliced carrots, cucumber, jicama and bell pepper!
Quick tip: I recommend making this a few hours in advance to allow the flavors to develop and come together.

1½ cups full-fat Greek yogurt
½-1 cucumber, peeled, seeds removed and diced
1-2 cloves garlic, minced
1 tablespoon apple cider vinegar
1 teaspoon salt
3-4 tablespoons fresh dill, minced
1-2 tablespoons fresh mint, chopped
½ teaspoon lemon zest
1 teaspoon lemon juice
1.) Stir all ingredients together in a bowl and mix until combined. Serve with protein of choice, fresh vegetables, or on top of salad.
