Pineapple-Bacon Salad

Prep Time: 10-15 minutes | Serves: 2



4 cups mixed greens
4-6 slices uncured bacon, cooked and chopped
1 cup fresh pineapple, sliced
Avocado, to taste
Red onion, to taste
Balsamic vinegar, as needed
Olive oil, as needed
1 clove garlic, minced

Optional for serving: Protein of choice


1.) Place the greens on two plates (or in bowls) and top with the bacon, pineapple, avocado and red onion. Whisk together the balsamic, oil and garlic and drizzle over the salads before serving.
