Burrito Bowls TONIGHT!
Prep Time: 10-15 minutes | Cook Time: 10-15 minutes | Serves: 2-3
For the beef:
1 pound grass-fed beef
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon cumin
1 teaspoon chili powder
1 teaspoon smoked paprika
½ teaspoon chipotle powder
1 teaspoon oregano
½ cup salsa
1-2 tablespoons tomato paste, (thinned out with a little water)
2-3 cups cauliflower florets, processed into rice
1 tablespoon coconut oil
Salt and freshly ground pepper, to taste
Garlic powder, to taste
Onion powder, to taste
Optional toppings: diced tomato, salsa, olives, lime juice, shredded cheese, shredded cabbage, red onion, cilantro, jicama, jalapeños, green chiles, etc.
1.) In a large skillet over medium-high heat, cook the beef, breaking it up into pieces as it cooks. Once it’s almost fully cooked, drain off the fat and add the spices, salsa and tomato paste. Mix well and simmer for 4-5 minutes, or until fully cooked. Remove from the heat and set aside.
2.) In another large skillet over medium-high heat, melt the coconut oil and sauté the cauliflower rice for 4-5 minutes. Season with garlic and onion powder, salt and pepper and cook until tender.
3.) Take a scoop of meat and cauliflower rice and place it in a bowl and top with any other desired ingredients. Serve!
